Sometimes I feel a little silly about enjoying character meets as much as I do, since I'm a full-grown adult, but I think Disney brings out the child in you! It's kind of fun to "collect" these character photos and to meet new or rare characters in the parks! DISNEY December 2015 in Epcot Click "Read More" to see the rest!

Kevin and I went on a much-needed weekend getaway to Bentonville. This was a very low-key trip - I had a lot of work and poetry projects to catch up on, so we brought our books, laptops, & Olive (our blind rescue toy poodle) & rented a cute Airbnb.
Most of our trips revolve around food, so we made sure to visit some restaurants & coffee shops too! Bentonville is home of my favorite coffee shop, Onyx Coffee Lab. We also ate brunch at Hail Fellow Well Met, and grabbed dinner (& an amazing chocolate coffee dessert) at Preacher's Son. It was a nice, quiet trip! DAY 7
We grabbed coffee at a cute shop in the train station, then headed into Amalfi. When I tell you that the bus system on the Amalfi Coast is absolutely terrifying, that is an understatement. We passed cars and buses within inches - at one point we were so close to another bus, the side mirrors were scraping the edge of the bus. This is made even more terrifying when you consider there are typically cliffs and rocks on one side, and a straight drop into the Tyrrhenian Sea on the other. The roads are also winding up through the cliffs, and sometimes you can't see around the corner (they have mirrors set up so the drivers can glimpse around the curve), and sometimes the road is only wide enough for one vehicle. On Day 3 in Italy, we grabbed coffee in Rome, then took the train into Florence. We stopped off at our Airbnb to drop off our things, then went out to explore a bit. This Airbnb had a bath tub and a tiny little washing machine, both of which were highly appreciated! We went for some pizza at L'antica Pizzeria da Michele. This is apparently the pizza place where Julia Roberts' character went in Eat Pray Love (although she was at the Naples location). I've never seen or read Eat Pray Love, but re-enacted the photo anyway. This was one of our favorite pizzas on the trip! Other than a road trip with my family where we drove into Canada for a couple of days when I was in late middle school, I had never had the opportunity to travel outside of the U.S. Around that same time in middle school, one of my teachers gave us an assignment where we had to plan a dream vacation, with budget, activities, etc. I planned my dream vacation to Rome, so it was very special to get to live that out! Overall things to note for our time in Rome:
- The gas stations here were interesting to me! They were basically little curbside stops - very different than U.S. gas stations. Google "gas stations in Rome" to see examples! - Everything was very walkable, but the roads were often very narrow, and the drivers are often very confident. There were times when we were walking on a curb a few inches wide, pressed up against a building, and cars were driving by just a couple of inches away like it was no big deal. - This goes for the whole trip, but I forgot the regular lens for my camera and I was so disappointed to only be able to get phone photos. - We had Kevin's credit card and Kevin's phone, but didn't get an international credit card or sim card for me, assuming we'd be together the whole time and wouldn't need it. I wouldn't recommend this for future trips - it would've been much easier if we'd both had access to our phones and money! - It was amazing to see such ancient history right in the middle of the city. We'd be walking on a busy street with very modern buildings, then turn a corner and suddenly see the Colosseum or other ruins. - Coffee shops are not typically cozy, sit-down locations like we have in the U.S. Most of the time, you order a quick coffee, drink it standing at the counter, then move on to your next location. - All over the places we saw in Italy, we saw the most gorgeous colors and varieties of flowers. I was constantly stopping to snap photos of them! This was also my first experience with TSA PreCheck. I can't believe I waited this long to get it - it's well worth the price! Click "Read more." I am very lucky in that I have been able to travel often throughout my life! Travel is such a great mental and physical escape for me, and some of the best times in my life have been exploring new places. Here's a little overview of where I've been! I've been to (or at least through) 41/50 states, but have only traveled to Canada & Italy internationally. Looking forward to more international travel in the future! Arizona. We stopped at the Grand Canyon on our way to California. It was gorgeous, & I'm so glad I was able to see it! (The last photo is a Parks & Rec reference.) Kevin & I had the best trip to Colorado for his birthday weekend! We had so much great food & visited some beautiful places. Grateful to Kevin’s dad for having us visit! I kept track of where we ate. Stars by our favorite places/dishes for my own future reference! Our first stop was The Lucky Dumpling by Brother Luck for lunch. We got shrimp shumai*, kimchi, pork belly bao, black garlic lo mein, shrimp congee, duck egg rolls*, miso creme brûlée, & a soy caramel old fashioned.* Click "Read More" to see the rest of the trip!
Kevin and I took a trip to Nashville! We had so much great food, and had a very enjoyable trip overall. We kept a list of all of the restaurants and foods we tried, and rated them to have for future reference! Red-Headed Stranger 5/5 This was on Diners, Drive-ins, & Dives, so we decided to give it a try. I HIGHLY recommend going if you're ever in the Nashville area! The homemade crunch wraps are amazing, and the green chili cheeseburger is also really good! Click "Read More" to see the rest of the trip!
