Kevin & I had the best trip to Colorado for his birthday weekend! We had so much great food & visited some beautiful places. Grateful to Kevin’s dad for having us visit! I kept track of where we ate. Stars by our favorite places/dishes for my own future reference! Our first stop was The Lucky Dumpling by Brother Luck for lunch. We got shrimp shumai*, kimchi, pork belly bao, black garlic lo mein, shrimp congee, duck egg rolls*, miso creme brûlée, & a soy caramel old fashioned.* Click "Read More" to see the rest of the trip! That night, we had dinner at a cute Alice in Wonderland-themed restaurant called the Rabbit Hole. We ordered the fall salad, seafood mac & cheese, rabbit meatloaf, & a Rabbit Hole mojito. The next day, we went to Denver to go to Meow Wolf: Convergence Station. It was such a cool experience! We got back to the Colorado Springs area and met up with his dad at Wines of Colorado, where we got an old fashioned flight. We had a great dinner at Dos Santos, where we had chips & salsa, esquites, crunchy taco supreme, roasted cauliflower taco, & their featured cocktail. We also grabbed a drink at his dad’s favorite local bar. The next day was Kevin's birthday. We went to The Donut Mill, where we got maple Bavarian creme*, lemon-filled, & blueberry -filled donuts. For lunch, we grabbed a burger at Ivywild, an old school that was turned into a market. We had a gorgeous dinner at Four by Brother Luck. We ordered blue cornbread, chili crusted pork lomo*, green chili* (I still think about this dish often), seared scallops, New York strip, asadero chicken, pumpkin spice profiteroles, & Guanaja molten chocolate cake with spearmint ice cream*. That evening, we made reservations at both locations of Allusion Speakeasy. This is a bar that rotates their theme, decor, and menus every few months - and it happened to have a Star Wars theme while we were there! We went to the Powers (Empire) location first. I want to say thanks to Emily Lorenz for hooking us up with a free round & the best table at the bar! When they said, “You’ll be at the Vader table,” I thought maybe there’d be a Vader centerpiece, but it was much cooler than that! The drinks we ordered were Cloud City*, Blast Em*, Lord Vader, & Boba Fett. After that, we went to the Downtown (Rebels) location, where we ordered Blue Bantha Milk & This is the Way. It was a wonderful getaway, and we enjoyed our time with Kevin's dad. He snapped these photos of us at Garden of the Gods!
